Gordon Ramsay's escape : the Indian Saag Aloo(Spinach Potatoes)

I was looking for a light and flavourful Saag Aloo recipe since quite some time now . Summer is here and did not want too many spices in the dish ..I came across the great escapes of Gordon Ramsay ..where he has a decent section on Indian vegetarian food .

Ingredients :
600 gms Potatoes, boiled and choppedÂ
400 gms Spinach  Â
3 cloves of Garlic, peeled and choppedÂ
Pinch of AsafoetidaÂ
1 tsp of black Mustard seeds(rai )
1 tsp of Onion seeds(kalonji)
1 no. Sliced Onions
1Â Green chili, finely slicedÂ
1/2 tsp of cayenne pepperÂ
1 tsp SaltÂ
Squeeze of lemon juiceÂ
Oil
To prepare:
1. Slice the onions . Cut the potatoes into cubes .
2.Blanch Spinach leaves for 1 minute in salted boiling water .
3.Drain aand squeeze out the water . Coursely chop the leaves .Â
4. Heat oil in a pan and add the mustard and onion seeds . When they start to crackle , add the onion , garlic and chilly.
5.Add the potatoes and season with salt and pepper . Cook for 5 minutes .
6.Add blanched Spinach along with lemon juice . Give it a stir until the Spinach is heated through .Â
7. Serve hot with roti or rice .
